New Orleans - French Quarter: Southern Candymakers - Pralines Southern Candymakers, located at 334 Decatur street, has been making pralines made simply of fresh milk, cream, butter, sugar, and jumbo pecans halves the traditional way, each one scooped by hand to cool on a marble slab since 1992. Pralines are said to have originated with French soldier Marshal du Plessis-Praslin's cook, Clement Lassagne in the early 17th century. New Orleanians substituted Lassagne's almonds and refined sugar with pecans and brown sugar to make a uniquely local favorite.
